Mom's Hawaiian Carrot Cake

Why pay up to $5.00 for a slice of dried out carrot cake at your local coffee shop or bistro? Try this scrumptious Hawaiian Carrot Cake recipe (pineapple carrot cake) and you'll never go back to store-bought carrot cake again. This is the best carrot cake recipe — moist, sweet, rich and to die for.


  • 2 cups unsifted flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 1/2 cups sugar
  • 3/4 cup mayonnaise
  • 1 can (8 ounces) crushed pineapple undrained
  • 2 1/2 cups shredded carrots
  • 3/4 cup chopped walnuts
  • Measuring cup and measuring spoons
  • Mixing bowls and spoons
  • Egg beater
  • 2 8" X 4" baking pans


Hawaiian Carrot Cake

In a mixing bowl stir together first five ingredients. In a large mixing bowl beat eggs, sugar, mayonnaise and pineapple until well blended. Gradually beat in flour mixture. Stir in carrots and walnuts. Turn mixture into the two 8" X 4" greased baking pans. Bake in a 350º F oven for 60 minutes. Let cool.

You may ice your Hawaiian Carrot Cake with a cream cheese icing. To make this icing simply blend equal parts of cream cheese and icing (powdered) sugar (about 1/2 cup each).

You may use whole wheat flour for the Hawaiian Carrot Cake recipe. It works quite well.
